年越しそば New Year’s Eve SOBA

早いもので、明日はもう大晦日[おおみそか]です。そういうわけで今日は日本人の大晦日の習慣[しゅうかん]、年[とし][こ]しそばについて書きます。

そばは日本人の食生活の一部で、日本人は毎日ではないけれど、よくそばを食べます。だから、そばはふつうの食べ物です。しかし、1年に1度特別[とくべつ]なそばがあるのです。それは、大晦日[おおみそか]、つまり12月31日に食べる年越しそばです。年、Year を越す、Cross over のそばです。この年越しそばの習慣[しゅうかん]の由来[ゆらい]、にはいろいろあります。例えば、そばは切れやすいので、1年のいやなことを切って忘れて新しい年を気持ちよく迎[むか]えよう、とか、そばは長いので、長く生きるように、とか…。私はとてもそばが好きなので理由は何でも、そばを食べるのはとても楽しみです。

NZのスーパーでもそばを買うことができます。今年は大晦日にそばを食べてみませんか。英語の料理の本にもそばが出ていますよ。例えば、最近のゴードン・ラムジーの本にもそばのレシピがありましたよ。

私の年越しそばの作り方はとても簡単[かんたん]です。そばを袋[ふくろ]に書いてある通[とお]りにゆでます。だいたい5-6分くらいだと思います。そして氷を[こおり]入れた冷たい水の中に入れて、そばを冷[ひ]やします。そのあとそばの水を切って、お皿に入れます。これをそばつゆにつけながら食べるのです。そばつゆは、しょうゆ、みりん、酒[さけ]、だしをあわせて作ります。そばつゆにわさびを入れると、とてもおいしいです! そばだけだとさびしいので、てんぷらも作るつもりです。

Have you ever heard of Toshikoshi-soba (New Year Eve’s soba)? Soba, buckwheat noodle is fairly common food in Japan but there is one very special soba for us; Japanese have custom to eat soba on the New Year’s Eve and this is called Toshikoshi-soba. There are several explanations for this custom: for example, soba is easy to cut, so we forget about bad things happened to us this year like chopping soba noodle and have a great new year; for another example, soba is long and we eat it hoping to have a long life in the future and so on.

You can now buy soba in New Zealand supermarkets. So if you have something you want to forget now, why don’t you try soba at the end of this year? You can now even find recipes with soba in all sorts of cooking books, for example, in Ramsay’s latest book*  (his recipe sounds a bit “untraditional” for Japanese, but never mind)!  
 
My NYE Soba is real easy. I cook soba noodle as the instruction on the back of the package says. As I want to eat it cold, I put the cooked noodle into a bowl with icy cold water immediately after I cook it, and then drain. I eat this cold cooked soba with soba-tsuyu. (“tsuyu” in this case means dipping sauce). I make soba-tsuyu with soy-sauce, mirin, sake (I often use white wine instead of sake because it’s easier to get!), and dashi (“dashi” is Japanese stock, you could buy dashi-powder to make dashi which is cheating, but the easiest way to get dashi!). You should not forget wasabi to eat with this cold cooked soba; wasabi does the magic! Eating just soba is okay, but I often cook tempura to eat with. Indeed we have a dish called “tempura soba” meaning soba with tempura. Sounds nice?
